Tilapia Meal Prep
Honestly this meal is made within 30 minutes. This is a go-to during the week, and you can make about 4 servings in under an hour.
Ingredients:
- 4 Tilapia Filets (fresh)
- 1 lemon
- Mrs. Dash Salt free Lemon Pepper
- Butter
- Olive oil
- 1 big bag of spinach
- 6 cloves garlic
- Yukon Gold Potatoes (as much as you want to make)
- salt and pepper to taste
- 1/2 cup half and half creamer
Directions:
- Preheat Oven to 350 degrees.
- take out a cookie sheet tray and place aluminum foil over. Put olive oil over foil so fish doesn’t stick
- place tilapia on sheet and melt some butter over the fish
- spinkle with mrs dash lemon pepper, and slice a lemon over the top
- place in oven and cook for about 25 minutes
- Boil water for potatoes, peel them and chop into quarters. Once soft mash and add half and half, salt and pepper to taste
- take large sauce pan and add olive oil over medium heat. Add butter and garlic to the pan. Let it sauce for a few minutes until aromatic and then add bag of spinach. Use remaining lemon and squeeze juice over spinach. Salt and pepper to taste.
